Iced Vanilla Latte

1 cup of granulated sugar

1 vanilla bean, split lengthwise and then cut in half

1 cup of rolled oats

3 dates, pitted

This drink was inspired by the World Famous Iced Vanilla Latte at Alfred in Beverly Hills. When I ordered the Iced Latte I was asked what kind of milk I wanted, I said what do you recommend and the Barista recommended an Oak Milk which I had never had before. Instant fan! This was the best Iced Latte I have ever had and I will definitely go back for another, but until then, I will make it at home and now so can you!

Make the vanilla syrup. Place the sugar, 1 cup of water and vanilla bean in a small saucepan, bring to a boil over medium-high heat and then turn off and let sit.

In a blender, combine the oats, dates, a pinch of Kosher salt, and the remaining 3 cups of water and blend for 1 minute exactly. Using a metal sieve lined with cheese cloth, slowly pour the mixture over the cheesecloth and into a glass carafe, jar or other storage container. Using a spatula, stir and press the mixture against the cheesecloth to help the liquid drain through the sieve and into the container.

In a tall glass, add 1 tablespoon of the vanilla syrup, fill the glass up with ice, then add the Oat Milk and a splash or the whole shot of Espresso. For presentation, don't stir.

Oat Milk is a low calorie, slightly sweet substitute for regular milk with great flavor. The Oat Milk can be stored covered in the refrigerator for up to 5 days. The milk will tend to separate when sitting for a period of time, so just give it a good stir and it will be like new. You can also store the vanilla syrup in the refrigerator for up to a week or in the freezer for several months.
